How would you answer this... ?

You want to strike a balance between the two. The last thing you want is for your answer to "I'm interested in X because Y" to get lost in the story, but you also don't want your answer to be dry and boring. So, tell your story, but leave out things that aren't directly relevant to why you're interested in...whatever you're interested in.
